Our Chardonnay comes from the San Lorenzo vineyard, located in Isla de Maipo, from the most occidental part of the Maipo Valley. This area stands out for being harvested later due to its Mediterranean climate with warm summer and autumns and persistent winds from the coast that help to cool down the temperature. Here the Chardonnay develops its great volume and expression. For more than 12 years these vines have been cultivated organically. The juice had an 8 months long fermentation with its natural yeasts at 18°C. During this time the wine was in contact with the yeast, which added complexity, roundness and volume. The wine remained in stainless steel tanks and no malolactic fermentation was done in order to preserve the freshness. It shows intense and fresh fruity aromas with a complexity deriving from the conservation of the wine on the yeasts. On the palate this wine is very well balanced, with good character and a nice softness.
