Our Sauvignon Blanc comes from the sub area of Tapihue in the Casablanca Valley, 25 km from the Pacific Ocean. The influence of the Ocean provides perfect conditions for the production of a fresh, aromatic and unique Sauvignon Blanc. Prior to fermentation, the juice was clarified at 60 NTU and then fermented at 12-16° C for 30 to 40 days. Once fermentation finished, 100% of the blend was worked with batonage of the fine lees during 3 months in stainless steel tanks. The wine was stabilized and filtered previous to its bottling.
