Our Rayun Premium comes from the organically managed vineyard San Lorenzo, located in Isla de Maipo. In this area the Mediterranean climate counts with persistent and cooling coastal winds during the afternoons. The high temperature difference between day and night allow a slow and gentle ripening of the grapes, allowing us to produce intense concentrated fruit with great expression.It represents the selection of our best barrels.
The total production is only 700 cases. Malolactic fermentation occurred naturally in new year old French barrels. The wine was aged in the same barrels for 14 months. The wine was bottled with an open filtration of 5 microns, and was aged for additional 6 months.
